Tandoori Aloo is a flavorful and vibrant North Indian dish where baby potatoes are marinated in a mix of thick curd (yogurt), tandoori masala, and aromatic spices, then grilled or roasted until charred and crispy. It’s the vegetarian cousin of the iconic tandoori chicken, offering the same smoky flavor and tangy-spicy punch.
Traditionally cooked in a tandoor (clay oven), it can easily be made at home in an oven, on a grill, or even on a tawa (skillet). The potatoes are parboiled for tenderness, then coated with a rich marinade that includes yogurt, red chili powder, turmeric, chaat masala, and kasuri methi. After grilling, they’re often garnished with lemon juice and coriander, and served with green chutney and onion rings.
Tandoori Aloo is perfect as a starter, party snack, or even a side dish for Indian meals.
