Mutton Chukka (also known as Mutton Sukka or Mutton Varuval) is a traditional South Indian dry-fry made with tender mutton pieces slow-cooked in a blend of bold spices, shallots, black pepper, and curry leaves. Once the meat is cooked until soft, it’s roasted in the same masala until it becomes dry, aromatic, and slightly crisp — giving it a rich and rustic texture.
